Strawberry Baked Oatmeal

One of my favorite breakfast meals growing up were those little packets of dry strawberries and cream oatmeal. I loved those things more than the real oatmeal Grandma would make on the stove. It probably  was because of all the sugar that came in each packet. Yay sugar! It probably wasn’t that good for me. I probably didn’t care.

Recently, I started to crave those little packets but couldn’t urge myself to actually make the purchase. Why not you may ask? Because I’m cheap and a big oil tin of oatmeal is a third of the cost. So I purchased that instead and vowed to discover an oatmeal recipe that mimicked it.  By golly gee, I think I found it.

This recipe is great because it involves fresh fruit and ingredients you likely already have in the kitchen. It also can be adjusted for the picky eaters in your house. My daughter likes her oatmeal soupy, so I just add a little milk once I make her bowl. Hubby seems to like it dry but I ain’t making no dry oatmeal. I’m in the middle so the results of this baked oatmeal is perfect. Wow we sound like the three bears. Either way, it’s a great breakfast with minimum effort and scrumptious oatmeal flavor. So the next time you’re in the store thinking of buying those packets…be cheap like me and grab that big ol’ oatmeal tin.

First, preheat your oven to 375 degrees.

Chop about 10 medium sized strawberries. You should have about 1.5 cup full. Set aside.

Combine 2 cups of rolled oats, 1/3 cup brown sugar, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp baking powder, and 1/4 tsp salt in a medium bowl and set aside.

In a separate bowl, whisk 2 cups milk, 2 eggs, 1.5 TBSP melted butter, 1/4 tsp vanilla. Once whisked, add in 1/4 cup of white granulated sugar and stir to combine.

Add your wet ingredients to your dry ingredients and give it a stir until combined.

Pour into an 8×8 casserole dish.

Now for the fun part. Sprinkle your strawberries over your oatmeal mixture and it should look like this:

Bake in preheated oven for 20-25 minutes.

Serve while warm. This oatmeal is great for leftovers as well…if you have any. Just stick in the microwave and add a little milk until you receive the desired consistency. Enjoy 🙂

Strawberry Baked Oatmeal

  • Servings: servings 4-6

Ingredients:
1.5 cup chopped strawberries, about 10 medium sized strawberries
2 cups old fashion rolled oats
1/3 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
1/4 tsp salt
2 cups milk
2 egss
1.5 TBSP butter, melted
1/4 tsp vanilla
1/4 cup white granulated sugar

Directions:
1. Preheat oven to 375 degrees. 
2. Combine oats, brown sugar, cinnamon, nutmeg, baking powder, and salt in
   a medium sized bowl and set aside. 
3. In a separate bowl, whisk milk and eggs. Add in melted butter, vanilla. 
   Then add in granulated sugar. 
4. Add wet ingredients to dry ingredients and stir until combined. 
5. Place in an 8x8 casserole dish. Place strawberries over mixture. Bake 
   in preheated oven for 20-25 minutes. 
6. Eat while warm and Enjoy :)
